Who Likes Chicken?

Okay, so here’s the thing. I got two comments on my last post – one that asked for all three recipes from the High-ish tea at once, and the other didn’t vote at all, instead complimenting me on all the things I do.

Thank you for the compliment!

I should punish all of you and not give you any of the recipes, but alas, I am far, far too kind. 🙂

So, because I’ve spent the majority of the last week tied up with work and other responsibilities and hobbies (can anyone say “Animal Crossing: New Horizons?”), this post will be very, very short. Behold! The Chicken Salad recipe that made MM a fan of cold chicken!

Chicken Salad

Course Salad
Cuisine American
Keyword Chicken
Prep Time 5 minutes
Servings 1

Ingredients

  • ½ c cooked, shredded chicken
  • ⅛ c mayonnaise (or 1 oz)
  • 1 Tbsp finely chopped shallots
  • 1 tsp dried tarragon leaves
  • 1 tsp Dijon mustard
  • Fresh Watercress optional

Instructions

  • Mix all ingredients in a bowl until combined. Enjoy on bread, toast, or alone!!

Super simple recipe that takes less than 5 minutes to mix up. It tastes the best on toasted white bread with watercress, though we’ve had it without watercress (having forgotten that we had that in the fridge, as well as without toasted bread (too hungry).

Those who know me personally will be shocked by this statement – the shallots make a difference. They should be part of this recipe!

Okay, now go. Eat chicken salad and be merry!
