These cookies just may take the place of the mint snow-top cookies that my mother used to make when Nestle Tollhouse manufactured mint chocolate chips…

Peppermint Hot Chocolate Brownie Cookies

Ingredients
- ⅔ cup shortening
- 1 ½ cups packed light brown sugar
- 1 TBSP water
- 1 tsp vanilla
- 2 large eggs
- 1 ½ cups All-Purpose Flour
- ⅓ cup dark cocoa powder
- ½ tsp salt
- ¼ tsp baking soda
- 1 cup peppermint crunch baking chips
- 1 cup dark chocolate chips
Instructions
- Preheat oven to 375° degrees.
- In a large bowl, cream shortening and brown sugar until light and fluffy. Mix in water and vanilla, then add eggs one at a time, mixing until combined.
- In a separate bowl, whisk flour, cocoa powder, salt, and baking soda until combined. With the mixer set to low, gradually add the flour mixture to the sugar and egg mixture, until just combined. Stir in baking chips and chocolate chips.
- Chill mixture in fridge for at least 30 minutes.
- On a baking sheet that has been lined with parchment, drop by rounded tablespoon, about 2 inches apart.
- Bake for 8-10 minutes. Cool on cookie sheet for 3 minutes, then remove to a wire rack to cool completely.
Notes
This particular recipe is pretty much a direct copy from the website, with a couple additional words in the directions. There are a couple things that I’d probably change up for next time – they ended up spreading out on the cookie sheet more than I would have liked, which to me indicates that I should try parchment instead of silicon mats next time. I’m also curious about whether or not I should add a touch more baking soda (possibly double it), but I’m not sure what it would do to the taste or the texture of the cookie.
Her recipe calls for semi-sweet or dark chocolate chips – I went straight to the dark chocolate, and I’m glad I did. They added richness to the taste that I absolutely love. And the peppermint baking chips weren’t nearly as crunchy as I expected, which I think was a good thing. I would like to try candy canes at some point, if only to get that crunch that I anticipated, but I have serious doubts at my willingness to go to the trouble of breaking candy canes.
Maybe if I’m super frustrated with something…
In any case, this was successful, and really tasty. I’ve made these now a few times, and decided to give them away as gifts to neighbors! Yum!
