Slow Cooker Beef Tips

  • Slow Cooker

Ingredients

  • 4 lb sirloin tip roast (or any beef roast)
  • 2 packets brown gravy
  • 1 c water

Instructions

  • Cut roast into 1 to 2 inch, bite size pieces, and place into slow cooker.
  • In a small bowl, whisk gravy powder into water, then pour mixture over beef.
  • Cook on low for 6-8 hours, or high for 3-4 hours. Serve over mashed potatoes or cooked egg noodles.

The most time consuming part of this recipe is cutting up the meat. I suppose you could ask someone at the meat counter to cut it up for your, or you could purchase something like stew meat, but the stew meat that I see at our grocery store is a little too large for my tastes. I’ve “standardized” on the sirloin tip roast, because it doesn’t have a lot of fat or gristle that I have to cut around, and we like the taste.

The end result is really tender, pretty much shredding itself as it leaves the slow cooker – and it tastes really, really good over homemade mashed potatoes (MM’s are especially good), or egg noodles.

I have cut the meat a day or so ahead (making sure I store it in the fridge in a air tight container), then get it set up in the slow cooker in the morning before getting started working. It fills the house with a lovely smell, and leftovers remain as tasty as the original. In a household of two, the leftovers last as well! Yum!
