In the attempt to use the multiple pounds of apples that we picked up at the orchard, I went looking for things like breads and soups. Something other than apple salads and applesauce. My normal sites weren’t giving me anything, so I headed over to Pinterest and found this one:

Apple Cinnamon Bread
Ingredients
- 1/2 c packed light brown sugar
- 1 1/2 tsp ground cinnamon
- 2/3 c white sugar
- 1/2 c butter, softened
- 2 eggs
- 2 tsp vanilla extract
- 1 1/2 c all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 c milk
- 1 large apple, peeled and finely chopped
Directions
- Preheat the oven to 350 degrees. Grease and flour a 9×5-inch loaf pan
- In a small bowl, mix brown sugar and cinnamon, then set aside.
- Combine white sugar and butter, until smooth and fluffy. Add eggs and vanilla, continuing to beat on medium until combined. Add flour and baking power, then the milk.
- Pour half of the batter into the prepared loaf pan, then cover with half of the prepared apples. Sprinkle with half of the cinnamon sugar mixture, and pat down with the back of a spoon.
- Repeat the process with the remaining batter, apples and cinnamon sugar, making sure to pat the apples and sugar into the batter.
- Bake for 50 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes before transferring to a cooling rack.
My thoughts on this recipe: The idea is there, but the execution doesn’t really hit the mark.
While the apples are super tasty, especially paired with the cinnamon sugar, the bread itself just tastes like plain, sweet bread. If I were to do it again, and I may, making it my own, I’d make sure the cinnamon and sugar were swirled throughout, instead of only on the tops of the layers.
Still, I’m not sure if that would be enough. It just seemed to be missing something. I’ll think about it, but if any of you have ideas, feel free to share below!
