I hate raisins. There. I’ve said it. Again.
But I love oatmeal cookies. Imagine my irritation when the loveliness of oatmeal cookies is marred by the thing I hate so much!
Chewy Oatmeal Chocolate Chip Cookies
Ingredients
- 1 c unsalted butter softened
- 1 c packed light brown sugar
- ½ c white sugar
- 2 large eggs
- 2 tsp vanilla
- 1 ¼ c all-purpose flour
- 1 tsp salt
- 3 c quick cooking oats
- 1 c chocolate chips
Instructions
- In a large bowl, cream butter and sugars. Beat in eggs one at a time, and then stir in vanilla. Combine flour, baking soda in a separate bowl. Slowly add flour mixture into the creamed mixture until just blended. Stir in oats and chocolate chips. Chill dough for 20-30 minutes.
- Preheat oven to 325° F. Prepare cookie sheets by lining with parchment paper or silicon mats. Drop chilled dough by the teaspoonful onto prepared cookie sheets. Bake in preheated oven for 11-13 minutes – be careful not to overbake! Let cool on baking sheets for 5 minutes, then transfer to wire rack to cool completely.

A couple years ago, I went on the hunt for an oatmeal cookie that contained not the aforementioned “gross” ingredient, but instead my favorite thing – chocolate.
You’d think I’d be happy with just taking an oatmeal raisin recipe and substitute chocolate chips for the raisins, but no. I needed one that was not only specifically created for chocolate, but also had the necessary softness of a chewy cookie. I’m not typically a crispy cookie fan (unless they’re Oreos).
My hunt took me to, of course, Pinterest. And I found one! Radiant Dust blog posted a recipe that I then took and made my own, adding a couple extra steps.
