For my second attempt at a Grandma recipe, I present to you: Chicken A-La King w/cornbread!
Grandma's Chicken a la King with Cornbread

Ingredients
- 1 box Jiffy Cornbread Mix
- 1 egg and 1/3 c milk for cornbread mix
- 1/4 c butter
- 1/4 c flour
- 1 tsp chicken bouillon granules
- 1/2 tsp thyme leaves
- 2 c milk
- 3 c frozen mixed vegetables, thawed
- 2 c cooked chicken, cubed or shredded
Directions
- Make and bake cornbread mix as directed on the box.
- In a saucepan, melt butter, then mix in flour, chicken bouillon granules, thyme leaves and milk. Cook until mixture boils and begins to thicken, stirring constantly.
- Add mixed vegetables and chicken, and continue cooking until heated through.
- Cut cornbread into wedges and spoon chicken mixture over the cornbread to serve.
I’ve never made Chicken a la King before, and I’m not sure that I’d ever actually tried it. Still, based on the recipe in Grandma’s notebook, it wasn’t so far out in left field that my picky nature would have an issue.

It’s funny – there are details missing in this recipe that would have been helpful. For example, shouldn’t the milk, chicken and veggies be cooked for a bit? For how long? How do you know that it’s done?

I’ve made things like this before, so it wasn’t difficult to get around those lack of details (though I could have let the chicken and veggies heat more than I did). It was nice to rely on instincts around the butter and flour side of things as well!

The only modifications I made were the following:
- Used two bouillon cubes (couldn’t find granules)
- Used shredded chicken
- Used unsalted butter, melted it, then whisked in the flour before adding the milk, granules and seasoning
Overall, it was actually pretty tasty! MM added a little salt and pepper to the finished product, which isn’t a terrible thing – after all, there was very little seasoning in the original recipe – though I didn’t find the need.
MM’s grandmother has a Chicken a la King recipe as well, though it’s without cornbread. We’re thinking of pitting the two recipes against each other, if we can get our hands on her recipe as well!
