In yet another attempt at finding a use for Suzanne the Sourdough Starter, and because MM had a craving for waffles (and the means of acquiring a waffle maker), I went a-hunting for a recipe that would meet both those needs. SeriousEats.com to the rescue (again)!
Sourdough Waffles

Ingredients
- 5 oz all-purpose flour
- 2 Tbsp sugar
- 1/2 Tbsp baking powder
- 1 tsp salt
- 2 eggs
- 1/2 c milk
- 8 oz sourdough starter
- 3 Tbsp butter, melted
Directions
- In a medium bowl, combine all dry ingredients. Set aside.
- In the bowl of a stand mixer, whisk eggs and milk until fully combined, then add the sourdough starter, whisking until completely blended. Add flour and butter, and stir until combined. The batter should have the consistency of pancake batter – adjust with flour or milk as needed.
- Cook in a waffle maker until golden brown.
The first time I made these was the very first time I’ve ever made waffles, so there was a bit of excitement in the air that morning. I’ve made them more now, so I know what to expect, and every time I make them they taste better!
This is a great way to use the discard of starter that comes with every week’s feeding, too. It feels quite a bit better to use the discard instead of throwing it away every single week.

This particular recipe results in slightly crispy outsides and chewy insides. MM has started to back off on his use of syrup with them (apparently they’re good with no accompaniment!), but I’m still slathering butter and syrup on them.
But I’m thinking of whipping out the chocolate syrup and whipped cream whenever we decide to have them for dessert instead of breakfast!
