Typically, you’ll see a bunch of pictures all over the web showing off pies for π Day. I decided to join in the fun this year as well, making a 6″ apple pie, much like I made for Christmas.

First up, you’ll need a dough recipe.
This is a pretty simple recipe for dough, and it uses a food processor to cut the butter into the flour.
I’ve found that it’s a little difficult to find the right temperature the dough should be once it has chilled in the fridge. Maybe it’s just the fact that my fridge has been running a bit cooler than normal lately, but the dough is super hard as a rock. In any case, once the dough has warmed enough, it’s pretty easy to roll out, but it absolutely cracks at the edges for me. Still, it’s not too difficult to get it moved into the small pie dish I have.
Next, you’ll need the apple pie recipe.
Kenji suggests using Braeburn apples, or Golden Delicious. I’ve used those before, and they’re not bad, but I don’t usually have those in my house – they’re just not our go-to apple. Therefore my apple pie is made using what we eat: Granny Smith and Jazz apples (or Pink Ladys, depending on availability). The filling is simple to make – most of the time is taken up by peeling and cutting the apples (since I don’t have one of those cool core/peelers).
This time around, I cut the lower crust a little shorter than I should have, but it still worked out pretty well. I also decided to play around with the decoration just a little bit. The main pie lid was brushed with egg washed and dusted with sugar. The decoration was brushed with a tiny amount of milk. I definitely was not intending to have such a dark decoration, but I’m still ridiculously pleased at free-handing the decor. 🙂
I’ve used the full recipes found on Serious Eats, which means I have a fair amount of dough and apple filling left over. That’ll probably turn into a rag-tag version of apple turnovers.
But that’s not the only dedication to π for this house. I’m also going to be making calzones, and telling myself that it’s basically a pizza, folded in half! That works, right? 🙂
