Nine weeks. Nine weeks IN A ROW, my husband has been eating Chicken and Veggie Chowder. I swear I didn’t force this on him.
Lately, MM and I have been crazy busy at work, and all we want to do at the end of the day is heat up something quick to eat and just relax as much as possible. As a result, we’ve been relying on recipes and meals that are pretty simple, or those that can be made over the weekend and then used for leftovers for the rest of the week.
It’s just incredibly simple, lasts the two of us for just over a week, and tastes great. It’s even pretty healthy after I modified the original recipe to use full fat ingredients. So if you’re looking for something tasty that you can modify with more veggies, or amp up with hot sauce (a favorite option of his), go check it out. Quick side note – don’t try to get away with only half the amount of cheese. I tried that. It failed. We still ate it, though, because OF COURSE WE DID.
Outside of the chowder (which we lovingly call stew), we’ve been rotating through a couple red meat options, including Classic Meatloaf (MM has started reheating it along with leftover bacon, which he’s really, really enjoying right now). Also in the list is Slow-cooker Cheese Stuffed Meatballs. I’ve gotten better with that one, figuring out the sweet spot of breadcrumb volume to make sure the meatballs are structurally sound but not too dense (keep it as close to 1/2 cup as possible!).
We’ve started using Pan-seared pork tenderloin as a regular meal as well, paired with a baked potato, too. While the potato takes a fair amount of time to bake, the pork takes about 20 minutes. To me, that means I can throw the potato in the oven, have a great end of the week conversation with MM, quickly cook the protein, and then shift to weekend disconnection!
As a result of rotating through all these recipes that we love, I haven’t been giving too much attention to new things. But I have a couple in mind! You’ll just have to stick around to find out what they are!

White chicken chili is good, and it lasts a few days. I cheat and buy McCormick’s white chicken chili packet, add water, and throw in white beans. I usually use ground turkey instead of chicken. So, I guess you could call it turkey chili. Bwah ha ha. Try it.
