Chocolate Mint Snow-Top Cookies

Quite a while ago, Nestle Tollhouse made mint chocolate chips. They’d only make them available around the holiday season, and because this was one of the recipes on the back of the bag, and my siblings and I LOVED them, my mom would buy quite a few bags each season to make a ton of them to enjoy while we were out of school.

Unfortunately, they stopped making this flavor of chocolate chips (but somehow they’re making cinnamon now? What’s with that?!?!) many years ago, so Mom had to adapt the recipe a bit.

Chocolate Mint Snow-top Cookies

Ingredients

  • 2 c Nestle Tollhous Semi-Sweet Morsels, divided
  • 1 1/2 c all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 c granulated sugar
  • 6 Tbsp butter, softened
  • 1 tsp vanilla extract
  • 1 tsp mint extract, divided
  • 2 eggs
  • Powdered sugar

Directions

  1. Microwave 1 cup morsels and 1/2 tsp mint extract in a bowl on high heat for 1 minute. Stir, then microwave at additional 10-20 second intervals, stirring until smooth. Cool to room temperature.
  2. Combine flour, baking powder and salt in a small bowl. In a large mixer bowl, beat sugar, butter, remaining mint extract, and vanilla. Beat in melted chocolate, then eggs, one at a time. Gradually beat in flour mixture. Stir in remaining morsels. Cover and chill until firm.
  3. Shape dough into 1 1/4 inch balls, then roll each in powdered sugar. Place on ungreased baking sheets (or silicon mats). Bake in preheated 350 degree oven for 10-12 minutes, or until sides are set but centers are still slightly soft. Cool for 2 minutes on baking sheets, then remove to wire racks to cool completely.

And now, I’ve adapted it just a bit more, because I dig mint, and if I can’t get it in the chocolate chips, I’m going to add more to the main batter.

These things are addictive, but a little messy, given the powdered sugar. But they look really cute – if they’re around long enough to admire! 🙂

By the way, these are fun to make with kids. They like rolling the dough around in the powdered sugar, and licking the chocolate off your fingers after rolling the dough is half the fun!
