The last time MM and I were in France, I ended up ordering Duck Confit on a whim. I didn’t remember if I liked it, and I was getting tired of being the one who always ordered chicken. Given the fact that it came with fries, I wasn’t too worried about going hungry if I didn’t like the legs.
Holy cow, the meal was amazing! So of course I wanted to try it at home. Easier said than done, though – again, finding duck legs in the Midwest isn’t as easy as you’d think, and the sheer amount of duck fat required meant delayed gratification to render enough, or finding jars that I can buy. But from where? Amazon came to the rescue, since all the grocery stores I tried didn’t carry it.
I tried it a couple times at home over the past few years, and was marginally successful. I wanted to do it again for the French portion of our European Stay-cation, but couldn’t find the recipe to try again. While the one I found on Serious Eats was manageable, it wasn’t the original one I’d used, so I was a little skeptical.
I stayed pretty true to the recipe, even though I despise parsley. The duck came out incredibly tender and very, very tasty. The one thing I need to figure out is how to crisp up the skin a bit.
The side? The Best Crispy Roast Potatoes Ever. They were… okay. Some things I’d change up there as well. Cutting the potatoes smaller, roasting longer so that they turn browner… Luckily, I had the duck fat from the Sweet-Tart Duck Breasts with Fresh Cherry Sauce, so they added quite a bit of flavor. All told, not a bad meal, and I have two duck legs left over, submerged in fat, hanging out in my fridge waiting for me to reheat them!
