MM left me.
Don’t worry! He’s coming back!
He had to head down to his mom’s so that she could travel with her husband and he could keep an eye on is grandmother. He’ll be away this whole week, and I may not see him until Saturday. He definitely won’t be able to make it to my family’s Thanksgiving event.
But, he’s doing the right thing, taking care of what needs to be taken care of, and making sure he’s keeping up with work all at the same time. And I love him for that.
Because I love him, I decided that he shouldn’t just take cereal down with him and survive on that for the week. Therefore, I was a cooking MACHINE yesterday, making a couple of easy to reheat leftovers that he could take with him.
The first – beef tips and mashed potatoes (he made the mashed potatoes, because he makes the best ones – don’t tell my family). I haven’t created a page about this, mostly because I never think to. The recipe is super easy, and I’m sure that others have probably done something like this before. It’s basically just a tip roast cut into bite sized pieces in the Crockpot with two packets of Brown gravy mix and a cup of water. Set on low for 6-8 hours, and you have about 6 servings of meat. That’ll last him the whole time he’s there, for each of his dinners.
The second – a modified version of chicken and dumplings made with homemade pasta instead of the dumplings. I haven’t made a page for this one either. And to be honest, outside of a quick taste of the pasta to make sure that it was done, I haven’t had a full taste test of it. Either way, at some point, I’ll have to create a page for this particular recipe. It’s a good one.
I’ve also been able to complete one of the sets of group gifts that I had on my list, and made a draft of the second set. Luckily, the draft proved that I should be able to get one of them done in a few hours, which is a lot less time than I anticipated. Hooray!
That leaves this week’s evenings to determine which sweet treat I should take with me to my family’s get together on Thursday! MM’s vote (though he won’t be there) is Chewy Chocolate Chip Oatmeal Cookies, but I’m not sold on it quite yet. That being said, I’m looking forward to testing out the convection setting on my oven!
