Roasting Potatoes

MM and I have been having the Pan-Fried Pork Medallions almost weekly lately. More often than not, I’ve been pairing them with a baked potato (shared between the two of us), just to make it super simple.

The problem with that is how long it takes to bake a potato – I’m not one to use the microwave for something like that. Don’t judge.

Unfortunately, sometimes I don’t have an hour to bake that potato. So it’s either go without, or figure out something different. This time, I figured out something different, thanks to a new website I found: table for two, and their favorite way to roast potatoes.

Simple Roast Potatoes

Super Simple, Quick Roasted Potatoes

Ingredients

  • 2 large russet potatoes
  • 2 Tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • ½ tsp kosher salt
  • ¼ tsp sweet paprika powder
  • ¼ tsp ground black pepper

Instructions

  • Preheat oven to 425° F, and lightly grease a baking sheet (or line with aluminum foil and spray with non-stick spray).
  • Peel, rinse, and dice potatoes into ¼-½ inch cubes, and place into a medium bowl.
  • Add oil and all seasonings to the bowl with the potatoes, and toss to ensure all are evenly coated.
  • Put potatoes onto baking sheet in an single layer. Bake on the middle rack for 30 minutes, flipping halfway through the roast. Potatoes are done when they are fork tender.

Notes

These may be our new favorite as well! It came together super fast, used ingredients I already had (no trying to figure out how to substitute for something that I don’t have on hand), and took almost the same amount of time it takes to fully prep and complete the pork recipe.

I can see doing this one many times in the future. I can also see heading back to this new (to me) website, and finding out what other kinds of potato recipes they like. Especially if they focus on recipes built for two…
